Colorado Rose is a red skinned tuber, with a white to light yellow flesh. It is a medium maturing, short dormancy tuber, that is more challenging to store. It was bred in Colorado in 1989 and released in 1996. It has a firm/waxy texture, which makes it ideal for boiling, roasting, baking, mashing, and steaming this spud.
